Tubole, Magis Mexican Grill



Bienvenidos a Tubole, Magis Mexican Grill!  Maria and Melissa will fill your tortillas and Andrew will wrap them for you, but not before he utters this rap:

All right Magis its time to eat dinner
A little sustanence for all you saints and sinners
being a teacher to be a bread winner
We hope it will sustain
Sustain that brain
that makes knowledge rain
in the city street lanes
and on the Nebraska plain
hopin' it doesn't cause too much abdominal pain
If Maria says, "Mi duele el estómago!"
Then Motter will put on a free puppet show
I sweat this food will make your face glow
Our burritos are truly the best thing

If you don't like rice and beans and think guacamole's a bore
salsa's a snore
and my rhyme's pretty poor
Then you might be punished by Darth Jake Moore
So not let's take some time and thank the one who saved us
And no it's not Sarah Davis
Or even the guy who thinks he has all the power
cuz when women listen to him and say Senor Bauer
This meal is the greatest not the least
We all know Peter Cunnungham balls like a beasrt
All right let's thank the founder of the this feast.







Burrito Bar Options (with recipes to follow):
Black beans
Ground beef
Rice
Guacamole
Pico de Gallo
Vegetarian re-fried beans (heated)
Salsa
Cheese

On the side:
Sliced cantaloupe
Homemade ice-cream sandwiches (recipe to follow)

Black beans
Ingredients:
1 large onion, diced 

5 cans black beans
5 cans diced tomatoes
2 cloves garlic, minced
salt and pepper to taste
ground red pepper to taste

Directions:
Saute onions until tender and translucent.  Season.
Add remaining ingredients and heat.

Ground beef
Ingredients:
2 large onions, diced
5 pounds ground beef
4 cloves garlic, minced
salt and pepper to taste
ground red pepper to taste

Directions:
Saute the onions until soft and translucent.  Add the ground beef and cook until brown.  Add the garlic and seasonings and heat through.

Rice

Ingredients:
1 bag cooked rice (brown, white, or a combination)
2 green peppers, diced
1 onion, diced
2 cloves garlic, minced
2 cans diced tomatoes
Fresh cilantro to taste
salt and pepper to taste

Directions:
1. Cook rice according to package directions.
2. Saute peppers and onion.  Season.  Once nearly tender add garlic.
3. Add to rice, along with tomatoes and more seasonings to taste.

Guacamole
Ingredients:
10 avocados
1 large onion, diced
2 cloves garlic, minced
1/2 jalapeno pepper, minced
2 limes
Salt and pepper to taste
Cilantro, finely chopped

Directions:
Mash avocados in a large bowl.  Add remaining ingredients and mix well.  Adjust seasonings.

Pico de Gallo
Ingredients:
10 roma tomatoes. diced
1 large onion. diced
1/2 jalapeno pepper, minced
Cilantro, finely chopped

Directions:
Add all ingredients to a large bowl and mix well.  Adjust seasonings.

Ice-Cream Sandwiches (made with vegan cookies!)
Note: The sandwiches should be made ahead of time so the ice-cream has time to set.  Allow time for the cookies to cool and then fill them with ice-cream, wrap, and freeze overnight.  This recipe is adapted from "Vegan Cookies Invade Your Cookie Jar."


Ingredients:
4 cups flour
1 1/3 cups cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 teaspoons salt
3 cups sugar
4 Tablespoons flaxseed (dissolved in 4 Tablespoons water)
1 1/3 cups soy milk
1 1/3 cups vegetable oil
3 teaspoons vanilla
1 1/2 cups dark chocolate chips (these are vegan!)

Directions:
1. Mix flour, cocoa, soda, powder, and salt in a large bowl.
2. In another large bowl combine the sugar, flax seeds, and soy milk until airy and smooth.  Add the oil and vanilla and mix well.  Mix in half the flour-cocoa mixture and combine.  Add the remaining.  Stir in the chocolate chips (add more if desired/needed).
3. Spray baking pans with oil spray.  Place cookies one-inch apart (they will spread out a little).  Bake at 350 degrees for about ten minutes.  Cool completely.
4. Create sandwiches with vanilla ice-cream and for any vegans, use almond, soy, or rice ice-cream.  Freeze overnight (or for several hours).
