Sloppy Joes




Sloppy Joes
Ingredients:
10 pounds ground beef
1 green bell pepper, diced
1 onion, diced
5 cans tomato soup
2 quarts catsup
3 Tablespoons chili powder

Directions:
1. Cook the meat until browned.
2. Place all ingredients in a crock pot and let simmer on low all afternoon.

Black Bean "Joes"
Ingredients:
1 can black beans
1 can tomato soup
1 teaspoon chili powder
1/2 green bell pepper, diced
1/2 onion, diced

Directions:
Saute all ingredient and heat through.

Cheesy Potatoes
Ingredients:
1 bag shredded potato hash browns
2 cups shredded cheddar cheese
1 can cream of mushroom soup

Directions:
Mix ingredients and bake in a casserole pan at 350 degrees for 30 minutes.

Serve buns on the side.
Serve with a green salad (romaine, tomatoes, and carrots) and sliced watermelon.

Breakfast for Dinner

This group prepared a breakfast feast complete with pancakes (including a vegan variety), crustless quiche (several flavors worth), bacon, and fruit salad.

Fruit Salad
For the fruit salad choose a medley of produce to suit the tastes of your mates.  For this blend Sarah sliced cantaloupe, bananas, and strawberries.

Crustless Quiche
(adapted from The Joy of Cooking)
Ingredients:
2 dozen eggs
9 cups milk
2 large green bell peppers, diced
2 large onions, diced
3 gloves garlic, minced
seasonings to taste
4 cups shredded cheese

Directions:
(This can be done in stages to make the measuring, mixing, and dividing easier--we made the quiches in three stages.  If you choose for this option, divide the ingredients by three before starting the quiche-making process).

1. Combine the eggs and milk in a large bowl and set aside.
2. In a large saute pan sear the pepper and onions.  Once these are softened, add the garlic and seasonings.  Heat through.
3. Add the vegetable mixture to the egg-milk mixture.  Add the cheese.  Mix well.*
4. Divide this among 3 large pans (or 2 large pans and 2 smaller pans.   See * below).
5. Bake in a 350 degree oven for about 30 minutes (the tops will be golden).

*If you want to leave a plain quiche, reserve part of the egg mixture and place in a smaller pan.

Pancakes
This group prepared 4 boxes of store bought pancake mix.  They added chocolate chips to half of the batter to make chocolate chip pancakes.  Jill made a batch of Vegan Pancakes that were enjoyed by some.  See recipe below.

Ingredients:
(taken from-and adpated-www.vegweb.com)
3Tablespoon flax seed
3 Tablespoon water
1 teaspoon vanilla
1 cup soy milk
2 tablespoons vegetable oil
1/2 rice flour (or wheat flour)
1/2 cup all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons sugar   
[Optional: 1/4 cup cocoa powder, to make chocolate pancakes]

Directions:
1. Combine the flax seed and water and mix until thickened (this serves as your egg replacement so the concoction should be about the consistency of a beaten egg).  Set aside.
2, Mix the dry ingredients together in a large bowl (reserve the cocoa powder for when you have used about half your batter.  If you choose to add the cocoa powder you can mix it into the remaining batter).
3. Add the flax seed, vanilla, and milk.  Mix until just incorporated.
4. Use a pan or griddle to cook until golden.

Bacon
Cook the bacon according to the package directions.

*It was a failed experiment in which Melissa promised to come when Andy beckoned, but ended up neglecting him when the pan started to pop and bend from the heat and the pan smoked.  No fire was started in the process.

Children's Lenten Food

This meal is a combination of foods typically served on Fridays during Lent for children.  When you attend any fish fry at a Catholic parish you will find many if not all of these items featured in this meal.  As a special treat this cooking group served "Zebra Cakes" for dessert.

Tubole, Magis Mexican Grill



Bienvenidos a Tubole, Magis Mexican Grill!  Maria and Melissa will fill your tortillas and Andrew will wrap them for you, but not before he utters this rap:

All right Magis its time to eat dinner
A little sustanence for all you saints and sinners
being a teacher to be a bread winner
We hope it will sustain
Sustain that brain
that makes knowledge rain
in the city street lanes
and on the Nebraska plain
hopin' it doesn't cause too much abdominal pain

Burrito Bar Options (with recipes to follow):

Black beans
Ingredients:
1 large onion, diced 

5 cans black beans
5 cans diced tomatoes
2 cloves garlic, minced
salt and pepper to taste
ground red pepper to taste

Directions:
Saute onions until tender and translucent.  Season.
Add remaining ingredients and heat.

Ground beef
Ingredients:
2 large onions, diced
5 pounds ground beef
4 cloves garlic, minced
salt and pepper to taste
ground red pepper to taste

Directions:
Saute the onions until soft and translucent.  Add the ground beef and cook until brown.  Add the garlic and seasonings and heat through.

Rice

Ingredients:
1 bag cooked rice (brown, white, or a combination)
2 green peppers, diced
1 onion, diced
2 cloves garlic, minced
2 cans diced tomatoes
Fresh cilantro to taste
salt and pepper to taste

Directions:
1. Cook rice according to package directions.
2. Saute peppers and onion.  Season.  Once nearly tender add garlic.
3. Add to rice, along with tomatoes and more seasonings to taste.

Guacamole
Ingredients:
10 avocados
1 large onion, diced
2 cloves garlic, minced
1/2 jalapeno pepper, minced
2 limes
Salt and pepper to taste
Cilantro, finely chopped

Directions:
Mash avocados in a large bowl.  Add remaining ingredients and mix well.  Adjust seasonings.

Pico de Gallo
Ingredients:
10 roma tomatoes. diced
1 large onion. diced
1/2 jalapeno pepper, minced
Cilantro, finely chopped

Directions:
Add all ingredients to a large bowl and mix well.  Adjust seasonings.

Ice-Cream Sandwiches (made with vegan cookies!)
Note: The sandwiches should be made ahead of time so the ice-cream has time to set.  Allow time for the cookies to cool and then fill them with ice-cream, wrap, and freeze overnight.  This recipe is adapted from "Vegan Cookies Invade Your Cookie Jar."


Ingredients:
4 cups flour
1 1/3 cups cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 teaspoons salt
3 cups sugar
4 Tablespoons flaxseed (dissolved in 4 Tablespoons water)
1 1/3 cups soy milk
1 1/3 cups vegetable oil
3 teaspoons vanilla
1 1/2 cups dark chocolate chips (these are vegan!)

Directions:
1. Mix flour, cocoa, soda, powder, and salt in a large bowl.
2. In another large bowl combine the sugar, flax seeds, and soy milk until airy and smooth.  Add the oil and vanilla and mix well.  Mix in half the flour-cocoa mixture and combine.  Add the remaining.  Stir in the chocolate chips (add more if desired/needed).
3. Spray baking pans with oil spray.  Place cookies one-inch apart (they will spread out a little).  Bake at 350 degrees for about ten minutes.  Cool completely.
4. Create sandwiches with vanilla ice-cream and for any vegans, use almond, soy, or rice ice-cream.  Freeze overnight (or for several hours).

Pizza!

Ingredients:
12 tubes of refrigerated pizza dough
6 cans tomato sauce
6 bags shredded mozzarella cheese
Various toppings:
onions
broccoli
pepperoni
hamburger meat


Directions:
Spray cookie sheets and lay one tube of pizza dough on a single cookie sheet.
Top dough with sauce, cheese, and toppings.
For your vegans, make one pizza without cheese.
Bake for 20-25 minutes, until crust is crisp and cheese is melted.

Serve with salad on the side.

Burgers and More

Beef Burgers
Ingredients:
10 pounds ground beef
Seasonings of your choice
Burger buns

Directions:
Mix seasonings with beef, and form into small rounds.
Cook in a large skillet on the stovetop.

Serve with a variety of condiments on the side.
For the vegetarians serve pre-made veggie burgers.

Sweet Potato Fries
Ingredients:
15 sweet potatoes, cut into long wedges
Olive oil
Seasonings (salt, pepper, ground red pepper, etc)

Directions:
Toss sweet potatoes in oil and seasonings.
Bake in a 400 degree oven for 20-25 minutes until browned and crisp.

S'Mores (oven style)
Ingredients:
1box graham crackers
1 bag large marshmallows
Chocolate bars

Directions:
Compile the s'mores: graham square, chocolate piece, marshmallow, and graham.
Bake in a 400 degree oven until marshmallows just begin to melt.

Stir Fry

Recipe adapted from Cambell's Collection: M'm! M'm!  Homemade in Minutes.

Ingredients:
7 Tablespoons vegetable oil
7 pounds boneless, skinless chicken breasts, diced
21 Tablesoons soy sauce
7 teaspoons garlic powder
7 bags frozen vegetables
28 cups rice

Directions:
1. Cook the rice according to the instructions on the package.  Set aside.

2. Heat half the oil in a large skillet.  Cook chicken until browned.  Add soy sauce and garlic powder..

3. In a separate pan heat the remaining oil and then saute the vegetables until crisp.  Season with garlic and soy sauce.*

*Note, some soy sauces are made with beef broth.  If this is the case reserve some plain, unseasoned vegetables for your non-meat eaters.

Fettuccine Alfredo, Etc.

Fettuccine Alfredo

Ingredients:
15 chicken breasts, diced
10 tomatoes, diced
3 large bags frozen broccoli
6 jars alfredo sauce
6 boxes fettuchine


Directions:
Saute the chicken until completely cooked.
Boil the broccoli.
Place tomatoes in a bowl.
Heat the alfredo sauce in a pan and serve on the side.
These items will be served as side options.
Serve spinach with croutons and caesar dressing on the side.



Garlic Bread
Ingredients:
4 loaves garlic bread, sliced
2 sticks butter
2 Tablespoons garlic salt

Directions:
1. Melt the butter in a small bowl.  Add the garlic salt and stir to dissolve.

2. Brush the bread with the butter mixture and broil for 5 minutes.




Serve with tomato sauce on the side (for another option).  For this meal participants choose their sauce type and whether or not they want chicken.  Some can also choose the salad route and made a chicken caesar salad.

For dessert, serve "Peter's Delight" (i.e. pre-made peanut butter cup cookies baked by Peter).
